Foss Marai – Sparkling Cuvée Brut “Surfine” The “Surfine” is a refined Brut: a part of the base wine matures in small barrels with micro-oxygenation for less than six months, refining the tannins, while the rest remains in steel. The bouquet is refined, with yellow fruit, wildflowers and a vegetal touch (bell pepper) reminiscent of Sauvignon. On the palate it is full and structured, with a long aftertaste that marks the style of the winery.
