Clos Saint-Hilaire 2002/2006 (Cuvée Unica) – Billecart-Salmon A monumental Blanc de Noirs, the result of a single hectare of Pinot Noir in Mareuil-sur-Aÿ planted in 1964. Vinified entirely in wood and aged on the lees for over ten years, it sports a brilliant gold and an incessant perlage. The aromatic picture is complex: honey, candied fruit, toasted and vanilla. In the mouth it is a wine of substance and structure, where the richness of the fruit is balanced by a deep minerality. A champion capable of defying time for decades.
