Benoit Beaufort’s Blanc de Blancs was born in Ambonnay, a Grand Cru historically famous for its Pinot Noir, but also capable of offering interpretations of Chardonnay of great precision and elegance. The Beaufort maison works with an artisanal and non-interventionist approach, trying to enhance the natural balance of the grapes and the expressive purity of the terroir through careful vinification and long maturation times.
Produced exclusively from Chardonnay, this Champagne takes shape from a harvest base completed by 40% reserve wines, an element that gives greater depth and stylistic continuity to the cuvée. Fermentation is managed to preserve tension and freshness, while the long aging on the lees accompanies the wine towards a creamier and more refined texture without losing precision. The dosage of 7 g/L helps to maintain the balanced and harmonious profile, discreetly supporting the natural verticality of Chardonnay.
On the palate it stands out for its elegant and bright style, with a fine bubble, a well-integrated freshness and a savory and persistent finish. A refined and versatile Champagne, ideal as an important aperitif or in combination with shellfish, fish tartare and delicate seafood cuisine.
