Castello della Sala – Antinori’s Cervaro della Sala 2023, obtained from the historic Umbrian estate located near Orvieto, is a white wine obtained from a blend of Chardonnay and a small percentage of Grechetto, grown on Pliocene soils rich in marine fossils with clay infiltrations. The grapes, harvested by hand, are vinified with fermentation in barriques and aging for 5 months in wood, followed by a further period in the bottle. The wine has a brilliant straw yellow hue and expresses intense and exuberant aromas of citrus fruits, pears, white flowers and vanilla on the nose. In the mouth it is soft and well-structured, with long persuasive nuances of butter and toasted fruit, representing one of the most iconic expressions of Italian whites, capable of evolving magnificently over time.
