Castello della Sala (Antinori) – Cervaro della Sala 2021 Cervaro della Sala 2021, the flagship of the Marchesi Antinori, is an Umbria IGT white wine that synthesizes refinement and structure. The vineyards, which surround the ancient Umbrian castle, rest on sedimentary soils rich in fossils, the ideal cradle for Chardonnay and the small share of Grechetto that make up the blend. Vinification involves alcoholic and malolactic fermentation in barriques for Chardonnay and in steel for Grechetto; This is followed by a maturation of 5 months in small wood and at least 10 months in glass. In the glass, it shows off a lively straw yellow, releasing strong aromas of citrus, tropical fruit and toasted nuances. In the mouth, freshness and salinity dominate, accompanied by flavors of chamomile, white-fleshed fruit and flint, closing with great depth. The name pays homage to the Monaldeschi della Cervara, nobles of the fourteenth century, and has been an oenological icon since 1985, among the first Italian whites to introduce malolactic fermentation and the use of barrique.
