Benoit Beaufort’s Champagne Extra Brut was born in the heart of Ambonnay Grand Cru, one of the most suitable territories in Champagne for Pinot Noir. The Maison Beaufort interprets this terroir with an essential and precise style, oriented towards the enhancement of the raw material and the natural balance of the wine, without excessive intervention in the cellar.
The blend combines 75% Pinot Noir and 25% Chardonnay, based on vintage vintage, and 50% reserve wines, an element that contributes to giving greater depth and stylistic continuity to the cuvée. The vinification is conducted with the aim of preserving the freshness, tension and integrity of the fruit, while the long aging on the lees slowly accompanies the wine towards greater complexity and a finer texture. The low dosage of just 2 g/L allows the mineral character and structure of the Ambonnay terroir to emerge with great clarity.
On the palate it is direct, vertical and refined, with a subtle bubble that supports a precise and savory matter. The finish is dry, persistent and elegant, making it a particularly versatile Champagne at the table, ideal with raw seafood, oysters, sashimi and preparations with a great taste cleanliness.
